Roast Leg of Goat

Ingredients:
1.3kg leg of kid goat, 3 garlic cloves, juice 1 lemon, 1 glass white wine, olive oil, 900g of potatoes; herbs (3 sprigs rosemary, 1tbsp oregano) Glaze 3tbsp of either pomegranate syrup or maple syrup, 1 tsp olive oil, ½ tsp ground coriander
Method:
- Pre-Heat oven to 180C,
- Rub meat with Salt and Pepper, then cut small incisions into the meat and insert the garlic that’s cut into strips and rosemary, put cut potatoes and meat into one pan.
- Add wine, lemon juice, drizzle olive oil, add oregano wrap in tin foil and add to oven for 2 hrs
- Mix all glaze ingredients and after 2hrs brush half onto the meat
- Return to the oven uncovered and cook for 30mins
- When meat is almost cooked brush with remaining glaze and cook for final 5mins
- Remove from oven and rest for 15mins then enjoy
