Rack of Goat
45mins – Easy – 4 people

Ingredients:
4 rib rack goat, 2 garlic cloves, 50g butter, herbs (3tsp rosemary)
Method:
- Rub rosemary, garlic over the skin of the goat and marinade for at least 30mins
- Heat oven to 200C, Season meat and brown on all sides in a frying pan
- Add to the oven for 10mins to medium or 12mins for well done
- Let the meat rest for 5mins covered in tin foil before serving with mash and green vegetables – enjoy
