Diced Goat Stew

2hrs – Easy – 10 people

Ingredients:

2.5g kid goat meat diced, 4 garlic clove crushed and chopped, 2 peppers quartered, 750ml chicken stock, 500ml sherry, 6tbsp olive oil herbs: 1tbsp smoked paprika, 2 bay leaves

Method:

  1. In large casserole dish heat oil and brown the meat in batches on medium to high heat, remove all the meat.
  2. Brown the peppers, then add the garlic, paprika, and sherry and simmer for 5 minutes.
  3. Add the stock, bay leaves, and browned meat- bring to the boil then simmer with the lid on for between 1.5 and 2hours until tender
  4. Serve with roasted root vegetables and mash potatoes and enjoy
