Rack of Goat

45mins – Easy – 4 people

Ingredients:

4 rib rack goat, 2 garlic cloves, 50g butter, herbs (3tsp rosemary)

Method:

  1. Rub rosemary, garlic over the skin of the goat and marinade for at least 30mins
  2. Heat oven to 200C, Season meat and brown on all sides in a frying pan
  3. Add to the oven for 10mins to medium or 12mins for well done
  4. Let the meat rest for 5mins covered in tin foil before serving with mash and green vegetables – enjoy
