Goat Ragu

3hrs – Easy – 4 people

Ingredients:

450g leg goat diced, 2 onions, 2 garlic cloves, 1 tin tomatoes – 2tbsp tomato puree -1 tsp sugar –150ml red wine – 175ml beef stock – herbs /spices (1tsp of each rosemary, mixed herbs, nutmeg, 1tbsp chilli flakes)

Method:

  1. Peel, dice onion and  add to pan on medium heat for 5-7mins
  2. Stir in crushed garlic, sugar and all herbs and spices Add goat meat and brown on a higher heat and season
  3. Add tomatoes, red wine, stock and tomato puree and stir in and bring to a boil
  4. Then cover and simmer for 2 to 2.5hours until thick
  5. Serve and enjoy
